Well, it’s Day Two of my attempt to eat only vegetables for 40 days.
What I learned today: I like carrots in soup. I just had a can of vegetable soup, so hopefully I won’t be hungry tonight during or after work. I did eat the chicken in the soup, so I guess technically I’ve already broken my goal. But it certainly wasn’t a lot of chicken. No, instead the soup consisted mostly of carrots.
Now, I don’t like carrots, unless they are just tiny tiny tiny. At least I didn’t think I did. I normally will eat everything in a stew or soup except the carrots. But this afternoon I was really, really hungry. So, I ate the carrots. All of them. They had absolutely no taste, none whatsoever. They tasted just like the potatoes in this soup. Really, nothing had any taste, now that I think about it. Not even the chicken.
But the soup was filling. And since I’ve been chilled all day and can’t seem to get warm, it was nice to eat something warm, though I didn’t drink the broth. Broth would fall under the category of drinking coffee or hot chocolate in my world. Yuck.
